Bacon and Brew Chili


My family loves when it gets cold, because it means I make my chili, my sister-in-law will drive 60 miles just to get a bowl.  So what’s the secret to my homemade chili?  Well if you must know, its bacon and beer.

Ingredients

  • 1 16oz package of bacon
  • 1 beer, brown ale, stout, porter
  • 2 lbs ground beef
  • 1-2 cups chopped onion
  • 2 28oz cans of peeled tomatoes
  • 1 8oz can of tomato sauce
  • 4oz tomato paste
  • 6 cloves of garlic crushed
  • 1 poblano
  • 2 -3 jalapeno
  • 1 habanero
  • 4 tsp ground cumin
  • 2 tsp oregano
  • 2 tsp unsweetened cocoa powder
  • 1 tsp paprika
  • 1 tsp kosher salt
  • 1 tsp chili powder
  • 1 tsp red pepper
  • 1 can red kidney beans

Tools

  1. Slow Cooker
  2. 2 Frying Pans
  3. Spatula
  4. Large Cooking spoon
  5. Cutting Board
  6. Knife
  7. Garlic Press

Directions

  1. In 1 frying pan, cook bacon until crisp, then set bacon strips asidebaconbrewchili1
  2. In another frying pan, cook ground beef until browned, drain off the grease
  3. Place cooked ground beef into slow cooker
  4. Cut up the bacon into small chunks
  5. Dice up all vegetables, onion, poblano, jalapenos, habanero, please note if you are afraid of the habanero, leave it out if you must, but add another jalapeno for a total of 3 instead of 2, if 2 jalapenos is still too much I suppose you can drop down to 1
  6. Crush garlic cloves into slow cooker
  7. Place cut up vegetables into the slow cooker
  8. Optional: Drain 1 can of red kidney beans, rinse them off then add them.  Personally I don’t like beans in my chili, but its the only way I can get my wife to eat it, so in they go
  9. Open up cans of peeled tomatoes and dump the tomatoes and the liquid into the slow cooker
  10. Open up the can of tomato sauce and pour into the slow cooker
  11. Open up the tomato paste and put 4oz into the slow cooker, note that usually tomato paste only comes in 8oz cans, so you only need half
  12. baconbrewchili2Pour your beer into the chili, for this typically go with a darker lager or ale, Sam Adams, New Castle, Guinness all work really well
  13. Place all measured spices and cocoa into the slow cooker
  14. Mix all ingredients thoroughly, try to smash up the peeled tomatoes a bit, this will become easier during cooking
  15. Place slow cooker on “Low” setting and cook for 10-12 hours, if you need it faster, cooking it on high for 4-5 hours should also work
  16. Periodically during cooking, stir the chili, and work on crushing up those tomatoes as they cook

If you like have some fresh sliced jalapenos, diced onion, cheddar cheese, sour cream, corn chips, corn muffins whatever you like to garnish your chili, or feel free to eat it straight up, either way it will warm you up during cold weather, or is just a great meal during football season.
